My Favorite Belgian Waffles

Still looking for ideas on nice things to do for Mom this weekend?  Maybe make her these really delicious and healthy Belgian waffles!  I have done these a few times and they really turn out great.  Top them with fruit, powdered sugar, chocolate chips, or whipped cream and make your mom extra happy this weekend!


My Favorite Belgian Waffles

2 c unbleached white flour
2/3 c whole wheat pastry flour
1 T Florida Crystals
½ t baking powder
1 ½ c almond, soy, or rice milk
1 very ripe banana
½ c earth balance
½ t vanilla extract
¼ t almond extract
½ c applesauce
Cooking spray

Mix together flours, Florida Crystals, and baking powder in a large bowl.

In a blender, puree these: almond milk, banana, Earth Balance, extracts, and applesauce.

Fold wet mixture into dry ingredients.  Batter will be very thick.  Add another splash of almond milk, if it’s too dry.

Make waffles using about ½ c of batter at a time.
