Casbah Couscous Salad




Okay, who has overdone it with cookies and candy and junk food? I have. Sugar doesn't even sound good to me right now... Here is a great recipe for a light lunch, snack, or side dish. It's tart lemon-y dressing really tastes good after all the sweets and rich foods.


Casbah Couscous Salad
1 cup cooked whole wheat couscous
1 cup diced tomatoes
1 cup diced cucumber
1/2 cup chopped scallions
3/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1 can chickpeas, drained and rinsed
freshly ground black pepper
1/2 cup extra-virgin olive oil
3/4 cup freshly squeezed lemon juice
3 cloves minced garlic
1 tsp sea salt

Combine in a bowl and serve cold or room temperature with warm whole wheat pita.

That's what I thought! I made a double batch a few days ago and it's gone--seems like the only veggies I have had in days...
